This would require some changes in the contact form generator class (choices\framework\php\class-form-generator.php) and probably some changes in js/avia.js (because of the input value validation). Please use a contact form plugin like: Contact Form 7 or Formidable Pro instead.

Hi there, I love the in-built contact form, but I'd prefer to modify it a little for my needs rather than include a huge plugin.

I just want to add a few custom fields, but they don't seem to come through on the post when I generate them dynamically, ie. like so:
'diet'	=>	array('label'=>'Special dietary requirements', 'type'=>'textarea').

Do you use .load()?

 responseContainer.load(form.attr('action')+' '+options.responseContainer, send.dataObj, function()

If so, how do I implement a server-side file to mail these new fields in a more customised way? Do I write my own send.php?
