It's not possible to create individual widget areas or "sidebars" for posts/portfolio entries. You can use a plugin like: <a href="http://wordpress.org/extend/plugins/widget-logic/" rel="nofollow">http://wordpress.org/extend/plugins/widget-logic/</a> to display certain widget for portfolio items only.
