When I create a new blog post and insert an image as the featured image it cuts out a lot of the picture. How do I keep it from zooming in on the picture and cutting off the outsides?
Also I'm still looking for help in keeping my logo from overlapping my slider in Internet Explorer. It is fine with Safari and Mozilla.

we can't influence Wordpress thumbnail generation function/cropping behaviour but you can try to change the thumbnail dimensions in functions.php. Maybe try to adjust the height values so that the preview thumbs have the same aspect ratios like your original images. Maybe you need this plugin: http://wordpress.org/extend/plugins/regenerate-thumbnails/ to regenerate your thumbnails.
Re logo problem - try to add following code to style.css (at the very bottom):
#wrapper_head{
height: 200px;
