I know that you can define custom labels for your nav items so I can title my about page “What we are all about” but then have it only display “About” in the nav.
Is there any way to have the breadcrumbs pull that custom label rather than the page title?

I do not think so. If there is a way to do it then it will most likely take a lot of time and code to implement so it would have to be considered custom work. It would be best to hire a freelancer to help you out with this customization.
