Is it possible to change the layout so that the categories (js_sort_items) of the portfolio are vertical instead of horizontal?

The sortable portfolio is powered by Isotope ( http://isotope.metafizzy.co/ ), and looking at the creator's website, I don't see such an example. You can ask him directly, but my guess is that it is not possible unless there is only 1 column.
