I would like to change the product image sizes on Shop Overview and Shop Detail page to reflect a rectangle instead of square (add height, reduce width). Where can I change these dimensions?

You'll want to checkout the "Hard Crop" setting in the Image Options area of WooCommerce>Settings>Catalog. Generally, you'll want to un check Hard Crop and change the width/height sizes to your liking. More info here:
