How do I change the words in the drop down menus at the top of the page (eg. home about portfolio) to something else?

You just need to change the title of the page / the title of the category.
You can also change the name of the menu item in the menu editor:
admin panel: design > menu
Here you can add pages/links and categories which should appear in the menu. Afterwards you can change the order of the items via drag'n'drop, change the name and description of the menu items.
