I'm trying to use different sidebars from the theme editor but they are only working with the main categories and not with the subs.
It's impossibile for me to create a different sidebar for each subcagetory so i wanted to know if there was a way to fix that.

You'll need to use a plugin like: http://wordpress.org/extend/plugins/widget-logic-visual/ to get in depth sidebar settings. That one for example will allow you to set specific logic based sidebar customization. There are others that may do more specifically what you are looking for as well.
