I have just installed and started to configure this theme but finding that every single page is displaying as the portfolio? I have set the portfolio configurations correct in the theme settings.

Hey,
could you link to your site? Normally, when creating a post you can select which template to use on the right hand side of your Dashboard. You can also create dynamic templates which you can then select.
