In my product descriptions, I cannot format text. It seems to be overriding any formatting I put in. Example: headings aren't blue and bullet lists don't appear. Is there an update I'm not aware of that fixes this? If not, what code do I need to put in and where, to fix these.

Not the theme but WooCommerce strips all html tags from the product description. You can try to use this plugin: http://wordpress.org/extend/plugins/woocommerce-custom-product-tabs-lite/ which adds html support to the product tab.
