Right now it's Skills, Client, Project... it says I can change these.... How do I do that? And can they be different with every post?

You can add more meta fields on the portfolio settings page (Coherence > Theme Options > Portfolio). By clicking on the green plus icon you can add a new field, with the red X icon you can delete an existing field. You can also change the label/name of an existing portfolio meta field.
