In my footer, I’d like some, but not all of my text to be links. In the below section (in left column of footer), I’d like to make the email address links open an email application. How do I do that?

You could go to Appearance > Widgets > and drag the Text widget on to whatever column you wanted the info.
Just make sure you use “<a href=” to create the mailto urls.
At least, that’s what I’d do.

@tessgacreat: Yep, you can do the suggestion above. Use the text widget to insert text and html tags. :)
