When I create a page and use the "Blog Overview" template it works OK and it displays all blog posts from all categories as expected. But what if I wanted the Blog page to display only posts from ONE (or several) categories? How can this be done? Thanks!

Edit the Blog Overview Page Template, template_blog.php, in Appearance > Editor on the right side.
Look for this line
$query_string = "cat=".$negative_cats."&paged=$paged";
Try changing it to
$query_string = "category__in=2,6&cat=".$negative_cats."&paged=$paged";
Where 2,6 is a list of category IDs that you wish to limit the query with. If that works well for you, then just duplicate the file in an FTP program and change the name and use that as the template.
