I have created a page which I don't want to show in the main page drop down menu. How do I make it not appear in the menu?

You can create a custom main menu by using the WordPress menu manager (Appearance > Menus). It allows you to add custom links, pages, categories, etc. to your menu and you can reorder the menu items via drag'n'drop.
