   Hey,
   1) normally the WordPress thumbnail generation shouldn't reduce the image quality noticeable. Can you post a link please.

   2) You can change the thumb dimensions in functions.php - afterwards use this plugin: http://wordpress.org/extend/plugins/regenerate-thumbnails/ to regenerate all thumbnails.

   It's not easily possible to extend the grid layout. It would only cause various display errors if it's not done properly. Imho major css changes are required to achieve what you want. I'd stick with the current layout.
