I have a problem on the image quality when adding them to the portfolio entries. When I first added a high quality image (1080×720) the image was too big for the page, but the background image was very clear. When I changed the image size to your example size (430×246) the image fit, but the background image was pixelated.
Is there a way where I can add a high quality image and make it fit in the space?

You should just be adding that one single large image and then the theme will re-size it for the thumbnail size. Make sure that in your wp-content>uploads folder you can see not only the images you upload but also the multiple other image sizes that get created.
If not, make sure that folders permissions are at least 755. Then try using this plugin to regenerate your thumbnails http://wordpress.org/extend/plugins/regenerate-thumbnails/ .
What should be happening is that when you upload a photo to the meta box under the visual editor for each thumbnail and get your portfolio gallery created each image gets a number of smaller images created. The full size image can be used for the background (if you choose that option) and the smaller ones will be used for the display within the content area depending on your display options (three column, flexible grid etc).
