Thanks Dude - but how do I make my Habitat site configure to look like the demo - where is the guide specifically for the Habitat options?

Under Habitat Options you'll find the dummy content installer. Just check the checkbox and click on save settings. A documentation is included in your habitat theme package - in a folder called "documentation_wp".
