I have a question about the menu manager in the display theme.
I there a possibility to define a link in the top menu which opens in a new tab (with target="_blank")?

Afaik there's an option for the link target. Go to Appearance > Menus and click on the "Screen Options" tab located at the top right corner of the admin screen. This will open a dropdown with several checkboxes - check the "Link Target" checkbox and WP will add a new option field to the menu item settings (called "Open link in a new window/tab").
