Is there a way for me to add multiple images to the portfolio categories without me having to upload them individually one by one and then name each entry?

The featured media uploader doesn't support such a feature but you can try plugins like: http://wordpress.org/extend/plugins/nextgen-gallery/ which allow you to create multiple galleries and to display them by using a shortcode.
