Is it possible to have the thumbnails of each portfolio page be the same size when listed on an overview page like it is on the frontpage of your demo site? Or will the photos used have to be the same size or in the same proportions to avoid being distributed in un-even sizes?

I believe the thumbnails in a portfolio element (within a template builder template) should automatically resize to all the same size.
If you are working with images that were uploaded with a different theme however, you'll need to regenerate the thumbnails so that they use this themes functions.php.
