...can I sort by shop category? I don't need sort by 'Price' or sort by 'date' as options - but would like to have the shop categories as options in this space. Is that possible?

Hey!
Currently there is no such option planned. i am afraid it would be rather tricky, maybe for a future release but for now you might want to search for plugins that can do what you want to accomplish :)
