Is there a way to exclude posts from the slider and only have them showcased below. I don't want EVERYPOST featured on the slider.

Yes under Newscast options > Mainpage options you can select which categories should appear in the slider - so it's the other way round. You include what you want and everything else is excluded.
You need to select the categories under: Featured Slider Categories.
