I should imagine this is quite simple. My posts can sometimes be very long so I would like to split the post into multiple pages. I jnow what the next page tag is. However, when I insert that, the content after the next page tag disappears and there are ways to view the next page.
Perhaps this functionality is not available in this forum but if it is, any help would be appreciated!

This is something which can be done quite easily. The function you're looking for is WP Link Pages and requires a little modification to single.php (for posts) or page.php (for pages).
Open it up and find this code:
the_content();
Immediately under this line, add this code (before edit_post_link(__('Edit','newscast'), '', '');):
wp_link_pages();
