Can you please outline the exact steps to add photos into the Portfolio? I've seen some general ones, but nothing that details the process. My issue is that I've added posts to Portfolio Items and selected the categories in Portfolio Options - but they don't get added to the Portfolio.

did you read the documentation? It describes everything really well - better than I can explain it to you. There are two important sections:
1) How to set up the portfolio pages - go to Avisio Options > Portfolio Options and follow the instructions here: http://www.kriesi.at/docs/avisio/#b4
2) How to create portfolio entries/categories: http://www.kriesi.at/docs/avisio/#b10
If you need more help please ask what you don't understand. It's important for me to know what's unclear so that I can write a better tutorial.
