To translate "All" you'll need to do is edit the template file directly. In your theme directory open loop-portfolio.php and replace this line
$output .= "<a href='#' id='all_sort' class='active_sort'>".__('All','avia_framework')."</a>";
with this:
$output .= "<a href='#' id='all_sort' class='active_sort'>".__('Tout','avia_framework')."</a>";
Now open sidebar.php and replace this line
echo "<a class='scroll_top_fadein' href='#top'><span>".__('Scroll to top', 'avia_framework')."</span></a>";
with this:
echo "<a class='scroll_top_fadein' href='#top'><span>".__('Scroll to Haut', 'avia_framework')."</span></a>";

I use the "One Page Portfilio" with several Portfolios where the thumbnails that are themselves linked to pages, located in one portfolio page ....

These pages are in submenu of their portfolio ... for now it suits me (because it is convenient for building the site ...)

then I would disable these menu pages, they will only be selected by portfolios (it would therefore be seen that portfolios , the home page and contact) I am understandable?
I would also like selected pages are highlighted in the "portfolio parent" in the menu (since they will no longer be visible ...) is it possible ?

Afraid, I'm not entirely following what you're trying to do as far as the sub-menus. My first thought is that you could setup the menu under Appearance > Menus but I'm not sure if that's the correct answer or not. So I'm going to tag the rest of the support team to see if they can be of assistance.
As far as the "portfolio parent" try adding this to your custom.css or Quick CSS.
.current-menu-item,
.current-page-ancestor,
.current-post-ancestor {
background-color: #444444;

Thank you for your help, I want to keep only in the menu: / Home / the different portfolios-Graphics - illustrations - Websites / and Contact... but not to make visible the submenu : "Atelier du Parc" "Les Zenimaux" "Croquis"...
all links (submenu) are also present in the portfolios ... because I want this type of navigation:
In the Menu: Choice of class, "Porfolio - Graphisme" >> in the Portfolio: Choosing the customer with the thumbnail "L'Atelier du parc" >> Which brings us to the desired location in the "One Page Portfolio"
For two reasons the menu will be much more understandable and to avoid the display problem, When the menu is larger Than the display window ... This is important because I have to add more customers.
I did some testing by removing or failing to give name to the element "page section" in the "Setting One Page Portfolio" the submenu disappears, but of course the link in the portfolio does not work anymore ...

I would like just a small thing...
Here for example I select the menu "Portfolio-illustration" tab is highlighted.

Then in the "Portfolio-illustration" I select "Croquis & Mise en couleur" and the tab in the menu is not highlighted anymore, which is annoying.

I wish that the tab in the menu remains highlighted, until we resélectionnera another ..

The menu does not support this feature at the moment - you can try following js code though. I've coded it without testing and I'm not sure if it works properly but it's worth a try - add it to the bottom of js/avia.js:

As far as I know, there's no way to do what you suggested. You may want to look into using a plugin like Total Cache 3, Super Cache, etc. to help optimize the website's load times though.
