When I am adding "captions" on the "featured media" section where does that information show up?
I'm not seeing it on on the blog roll preview images on in the post image itself, which is where I figure it is supposed to show up?

It should only be showing up on the individual page. Just in testing on my live installation I tested out adding a caption title and caption text with the Fade Slider and Full Width Slider options selected in the Slideshow options and didn't have any issues with the basic caption showing up.
Can you link to a post that has captions set on it that are not showing up?
