Is there a workaround (not using the template builder) to add featured products and "recently added" galleries to my pages ala the replete demo page?

No, the template builder is the only way to automatically add those features into a page.
You could use woo commerce shortcodes to get a basic product feed but it won't have any of the the theme effects applied to it. The same goes for a gallery in that you could use shortcodes and add in images but it wont have the same effects or be dynamic like a portfolio element would.
